Is there any software which will log all activities on an iPhone?

Specifically, recording emails being sent via hotmail, using Safari on the iPhone.

I'm not aware of any at the moment. However, the spy phone software sold these days for the iPhone is quite powerful. You can listen to live calls, remotely activate the mic, track GPS, etc.. I'm sure its just a matter of time until one of the spy vendors update their software to support full key logging. Perhaps within a year? Just a wild guess on my part, but I'm sure its not that far off.
